Vegetarian meal at the market

There are some area you can actually dine at the market

I must say this in THE ONLY PLACE that you pay meal as a local price.  All meal like chicken curry with rice or grilled fish with rice are 400 vatu ( A$1 = 107 vatu ) , quite cheap, isn’t it? 

Places are quite clean. I got scared many times at market or market dining area in South East Asia but here looks quite clean and peaceful, isn’t it? 

In Vanuatu, restaurants are purely only for tourist or foreigner who lives there.  Prices are definitely Australian price! Lots of people Australian and New Zealand actually come and live there as a second house or own business. 

We were checking all places..keep checking if we could have vegetarian meal…

then a kind lady took us to meet Esta, who can actually prepare vegetarian meals. 

Meet the only chef who cook vegetarian meal at market

Esta!!!!!! 

We had chance to have vegetarian meal at her place twice. 

Being vegetarian is not common at all in Vanuatu so, she cooked our meal to order. 

Fresh veggies cooked in fresh tomato. 

She said that is is quite common to eat this dish ( normally add meat though )

Veggies are cabbage, green beans, carrot and red capsicum, She pealed tomato and add after frying the veggie. ALL FRESH! YUM 

Then she asked us to come back next day, then she can actually prep eggplant dish for us. We promised to come back, after that day, she would go back to her island for Christmas holiday. So we promised to come back

The eggplant dish was ratatouille. Vanuatu used to be colony of France, so I guess French cuisine is common in Vanuatu in some way

Esta’s Ratatouille! 

It is a little bit different from French version. No zucchini, cos not grown here ( you can buy Australian zucchini in supermarket but expensive! ) but got some potato! Irish man next to me was really happy :)  It was so soft and fresh. I can tell she put a lots of effort to prepare for us. She again, peeled the tomato for this.  Such an effort. 

I must forget say about wonderful condiment that Esta makes 

Home made Achard 

According to Esta, Achard is marinaded chili that often used among Vanuatu people as a condiment.

Ingredients are chilli, vinegar, garlic, very small amount sugar and salt  + veggies like cabbage, carrot, onion, green beans and red capsicum. 

Quite a lots of vegetable, isn’t it? 

Hot? YEEEES! but it is quite nice to eat with meal! 

I am so grateful that Esta made an effort to make us lovely vegetarian meal. So nice! It was real hard to eat vegetarian meal in Vanuatu.
